This qualification is designed for learners who already have intermediate skills in baking, and wish to upskill to an advanced level in patisserie baking. This programme covers advanced patisserie techniques, patisserie and kitchen management, and includes a 5 week internship at a commercial kitchen or bakery. This programme equips learners with the skills to take up a supervisory role in a patisserie, or run their own patisserie.

This course expands on The Creative Baker (Level 4) course and will give you an awesome range of skills in advanced patisserie techniques, including how to make artisan breads, pastries, tarts, gateaux and more. It’s also ideal if you have some baking experience and have the skills to go straight into this course.

The programme is designed to get you ready to work in a supervisory role in the baking and patisserie sides of the food industry. As part of the course, you’ll have an opportunity to secure an internship where you’ll gain invaluable work experience.

Domestic Students

  • You need to be at least 17 years old.

  • Have a New Zealand Certificate in Baking (Level 4), or an equivalent qualification.

  • Or have three years' relevant and current industry experience (you'll need to show competency in Cookery, Maths and English).

International Students

  • You need to be a minimum of 18 years old at the start of the course.

  • Have completed secondary school overseas or New Zealand Year 11 from a New Zealand TEO) or have equivalent work experience.

  • If English is your second language, you need an English level of 5.5 IELTS or equivalent with no band score lower than 5 (other English tests or evidence of your English language ability may be approved as advised by NZQA).

  • You must have travel and medical insurance and a valid visa.
